Why do you use cauliflower instead of rice?

100g of cauliflower carries 23 calories.

100g of white rice carries 151 calories.

100g of white bread carries 289 calories

Blending or grating cauliflower and boiling it as a rice replacement is, therefore, a no brainer.  And it doesn’t stick, and it takes about a quarter of the time to cook.

Blending cauliflower even finer and using as a bun replacement in burgers or dough replacement in pizza maybe a little mashy and doesn’t rise as well, but it tastes the same and doesn’t have that gut blow out effect white bread does.
