What's so good about Chia Seeds?

Chia seeds are touted as the great endurance superfood.  In the book “Born to Run” we are told that the running Indians (who run 50 to 80km per day) live of a diet of chia, rats and beer.  Here are a few interesting facts about chia, in case some less than healthy naysayer decides to tell you it’s the beer that makes them healthy:

  •        Chia has eight times more Omega 3 than salmon
  •        It is 20% protein (which is a complete protein with 8 essential amino acids)
  •        It is high in antioxidants (It has a four times higher ORAC value than blueberries)
  •        Seven times more vitamin C than oranges
  •        Five times more calcium than milk
  •        Three times more iron than spinach
  •        It contains twice the potassium content of banana

If you add chia to water, it turns into snot.  Or if you want to close your eyes, you can almost convince yourself that it tastes like eggs.
