Eggplant (aubergine)

The old saying of “eat a rainbow of veggies” means we have to find alternatives to the usual green, red, green and more green.  The reason we look for more colours is that colours are a sign of phytonutrients. 

Phytonutrients are antioxidants.  Different colours mean different types.  Purple is not found very often, so it makes sense to include eggplant into your cooking.  The problem is that it is so weird that it just doesn’t seem to fit very well in any meals.

But don’t stress, we found a perfect place for it.  Sliced thinly, it makes the perfect replacement for lasagne sheets!
