Kale is like a superhero in the food world. It feels like dragon skin and is quite hard to eat, but once you begin including it into your diet (like we do with Kale chips), you’ll find the following awesomeness:
Kale is very high in beta carotene (a great antioxidant), vitamin K (strengthens bones), vitamin C (keeps away the sniffles), and rich in calcium (strong bones, muscles and connective tissue).
Kale is a source of two carotenoids, lutein and zeaxanthin (good for your eyes) and contains sulforaphane (particularly when chopped or minced), a chemical with potent anti-cancer properties.
kale is also a source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells. Kale also lowers cholesterol and decreases the absorption of dietary fat.
